In brief

Hokuriku's food follows the Sea of Japan calendar. Snow crab opens on 6 November, winter yellowtail runs November to February, firefly squid arrive in March and shiroebi (white shrimp) in April. Toyama has the sushi and the fine dining, Kanazawa the oden and jibuni (a duck stew), Fukui the crab, oroshi soba and sauce katsudon, and Itoigawa the red snow crab and the sake. Pick the month, then the town.

The top tables and somewhere to sleep beside them follow each prefecture below.

What I mean by food

I mean all of it, not only fish: sushi and crab, yes, but also the izakaya (pub) and the yakitori counter, and an unusual density of fine dining. There are Michelin-listed tables in Iwase and destination auberges such as L'évo in Toga and Homachi in Mikuni, and the whole region is on one Shinkansen line.

I still work in Tokyo regularly, and I rate Tokyo food a 5 out of 10 next to a 10 at almost any random place in Toyama. Visitors who loved the food in Japan usually mean the food in Tokyo; after a few nights in Toyama the bar moves. The hotels are less glamorous than Tokyo's, and cheaper. The food more than makes up for it. More of the case is in why Hokuriku.

If the tables are what you came for, start with where to eat in Toyama: 28 places checked on 14 October 2026, from Michelin-starred rooms in Iwase to a ¥1,000 ramen counter. The eleven omakase (chef's choice) counters are on the best sushi page, and crab dinners with a bed are on the crab ryokan page.

Below: a month-by-month table, then a section for each prefecture with the dishes worth the trip, a short list of tables worth booking and a few places to sleep beside them, followed by fish markets, more fine dining, sake you can reach by train, and the remaining stays.

Dates are fixed where a fishery or a brand fixes them. The rest are the usual months, so ask at the counter.

Toyama 富山

Toyama: the sushi prefecture and the food around it

Toyama Bay drops past 1,000 m within a few kilometres of shore and holds 500+ species. Toyama City spent ¥23,185 a household on sushi in 2024, more than any other Japanese city. For the fine dining, see where to eat in Toyama.

A set of local-fish nigiri with a rulebook: fish from Toyama Bay, rice from Toyama. The official set costs ¥2,700–¥5,500, with a longer Ikkon set (five pieces, sashimi and 180 ml of Toyama sake) at ¥5,500–¥7,700. Pictured: gasuebi, a Toyama Bay shrimp, at a Himi sushi shop. Winter yellowtail from November to February, fattest in December and January. Himi's certified kan-buri is the benchmark, and the fish council declares its start and end each year (usually mid to late November to about 20 January; the 2026–27 dates are announced in November). Order buri-shabu, paper-thin slices swished in broth, or a full kan-buri kaiseki (multi-course dinner) at a Himi inn. Pictured: a buri sashimi set at the Himi fish-market canteen. Masuzushi and kombujime鱒寿司・昆布締め

Toyama Station, Iwase and sushi counters

Masuzushi is salt-cured trout pressed on vinegared rice in a bamboo-leaf-lined round mould and cut like a cake. It keeps about 24 hours, so it is the Shinkansen lunch out of Toyama; Minamotono and Masuzushiya Takeura are the makers to know. Kombujime is white fish (hirame or suzuki) pressed between kelp, a legacy of the Kitamae-bune ships that carried Hokkaido kombu down this coast. Ask a counter for a piece.

Kanazawa and the Kaga table

Kanazawa has a working fishing port, cold winter water and 400 years of cooking for the Maeda lords. Ōmichō is the kitchen; the oden counters are the evening.

Kanazawa oden金沢おでん

Katamachi, Korinbo and around Ōmichō

Not the convenience-store kind. Kanazawa counters simmer kurumafu (wheel-shaped wheat gluten that soaks up the broth), the red-edged fish-cake roll aka-maki, daikon and egg. From 6 November to 29 December they add kani-men: the shell of the female kōbako crab packed with its meat and roe. Akadama Honten (金澤おでん赤玉本店) in Katamachi has served oden since 1927 and is closed Mondays; confirm kani-men with any counter before you sit down. Pictured: oden at Ōmichō Market.

Where else to sleep for dinner

The inns tied to a restaurant or a dish are listed under each prefecture above. These are the rest: a Himi coast inn for yellowtail, and two city bases for the Toyama and Kanazawa dining streets. At crab-season inns the dinner can cost more than the room, so check what is included. Himi kan-buri inns sell out three months ahead; crab dates from 6 November sell out first. Practical

Getting it right

  1. 01
Pick the month first. Crab opens 6 November, Himi kan-buri runs November to February, firefly squid arrive in March, shiroebi in April. A trip built around the wrong month still eats well, but not on the headline dish.
  2. 02
Market for lunch, booking for dinner. Ōmichō, Himi Banyagai and Shinminato take walk-ins. The Iwase tables, L'évo and the sushi counters need booking, some by phone only. See how to book Toyama sushi and the Toyama restaurant guide.
  3. 03
Check closed days. Ōmichō shops often close Wednesdays, Fish Station Ikuji on Wednesdays, Shinkiro on the 2nd Wednesday, and the Mikuni Port Market only runs on Sunday mornings.
  4. 04
Mind the trains. The Manyō Line, Ainokaze, Echizen Railway and Echigo Tokimeki are not all covered by a rail pass. See which pass before you rely on one.
  5. 05
Do not eat and walk. Both Ōmichō and Higashi Chaya enforce no eating on the move. Use the shop tables.
FAQ

Hokuriku food, answered

What is Hokuriku famous for food-wise?

Seafood from the Sea of Japan: snow crab from 6 November, winter yellowtail (kan-buri) from November to February, firefly squid in spring and shiroebi from April. Add Toyama Bay Sushi, Toyama Black ramen, Kanazawa oden and jibuni, Fukui oroshi soba and sauce katsudon, Wakasa mackerel and Niigata sake.

When is the best time to visit Hokuriku for food?

November to March for crab and kan-buri, March to June for firefly squid and shiroebi, and June to August for rock oysters in Wakasa. Crab dinners sell out first, from 6 November.

Is the food in Hokuriku better than Tokyo?

I think so. I put Tokyo food at a 5 out of 10 next to a 10 at almost any random place in Toyama, and I mean all of it, from yakitori and izakaya to sushi and kaiseki. Visitors who loved the food in Japan usually mean Tokyo; after a few nights in Toyama the bar moves.

Which restaurants in Hokuriku have Michelin stars?

The latest edition I found, the Michelin Guide Hokuriku 2021 special edition, gave three stars to Ryōri Komatsu in Kanazawa. Two stars went to Oryōri Fujii, SOTO and L'évo in Toyama, Kataori, Otome Sushi, Tempura Koizumi and MAKINONCÎ in Kanazawa, and Ittō and Sushi Jubei in Fukui. Courses run from ¥8,250 at Fukuya in Toyama to ¥40,000 and more at Kataori. Book online before you arrive, read the cancellation terms, and ask your hotel to phone if a restaurant only has a Japanese line.

Where can I eat fresh seafood in Hokuriku without a booking?

At the markets: Ōmichō in Kanazawa, Himi Banyagai and Shinminato Kittokito Market in Toyama, Mikuni Port Market in Fukui on Sunday mornings, and Kaniya Yokochō in Itoigawa for crab. Most have restaurants that take walk-ins.

How much does a crab dinner cost?

A ryokan crab course starts around ¥71,500 per person at Seifūsō in Awara and runs much higher for tagged crab. Market set meals and Toyama red snow crab are the affordable ways in; see snow crab prices by area on the crab ryokan page.

Can I do Hokuriku food without a car?

Mostly. Kanazawa, Toyama, Himi (Himi Line and a bus), Shinminato (Manyō Line), Mikuni (Echizen Railway) and Itoigawa are on rail. L'évo needs a shuttle from Etchū-Yatsuo and Rakudo-an is best reached by car or taxi.
