Tucked into the westernmost tip of Niigata, where the Northern Japan Alps collapse into the Sea of Japan, Itoigawa is one of the most geologically extraordinary places in Japan, and one of the most overlooked.
Sitting directly atop the Fossa Magna, a massive rift fault that splits Japan in two, it was designated the country’s first UNESCO Global Geopark in 2009.

Back to town for Itoigawa Black Yakisoba, the restaurant that invented the dish. Jet-black squid-ink noodles, omelette, ketchup-mayo lattice. Go at 11:30 to beat the queue.
Walk 20 minutes to Hisui Kaigan, hunt for jade among the pebbles (stones under 15 cm are legal to take). Then the 2,000-year-old Amatsu Shrine, finishing at the Tanimura Art Museum by Togo Murano.
Five-brewery sake flight at Jade Kingdom Hall (connected to the station). Dinner at an izakaya, nodoguro grilled with salt, or sashimi with Koshihikari rice.
