Toyama food beyond sushi富山の美味

Toyama’s food tourism reputation rests on sushi and firefly squid, but there’s a much broader food culture rooted in the same raw material: 500+ species in Toyama Bay, snowmelt water from Tateyama, and a centuries-long Hokkaido kelp trade that made Toyama one of Japan’s great kombu-eating cities.

A short list of fish names you’ll meet

Most Toyama food revolves around four prefectural fish: shiroebi (the “jewel of the bay”), buri (winter yellowtail), koshi no akagani (red snow crab), and nodoguro (blackthroat sea perch). All four are caught hours from the plate, in waters that drop past 1,000 metres within minutes of shore.

Then there are the dishes that aren’t about fish, Toyama Black Ramen, the soy-sauce-dark, post-war ramen invented for manual labourers; masuzushi, the pressed trout sushi presented as gifts to Edo-period shoguns; and the prefecture’s kombu (kelp) culture, rooted in the Edo-era Kitamae-bune sea trade route that brought Hokkaido kelp down the Sea of Japan coast.

Shiroebi, the jewel of the bay白海老

Toyama Station shops + city counter restaurants

Small, translucent, almost pearlescent shrimp found in commercial quantities almost nowhere else on Earth except Toyama Bay. Sweetness bordering on delicate melon. One of the three “prefectural fish.”

Eat as sashimi, on nigiri, in shiroebi-don heaped over rice (Shiroebi-tei at Toyama Station is the canonical lunch), or as kakiage tempura. Take home shiroebi sembei rice crackers, the easy souvenir.

Buri, the winter king鰤

Himi Onsen + Toyama City sushi counters

Cold-water buri (Japanese amberjack) that swim into Toyama Bay November to February are fatty, dense, and considered among the best yellowtail in Japan. The certified Himi Kan-buri stamp commands premium prices.

Five canonical preparations: sashimi/buritoro (raw belly); buri shabu-shabu (paper-thin slices in light broth, the elegant winter pinnacle); buri-daikon (simmered with daikon); buri-don; and yaki-buri kama (grilled collar/neck). Best at a Himi Onsen ryokan with a full kan-buri kaiseki course.

Toyama Black Ramen富山ブラック

Toyama City · multiple branches

Intensely black from soy sauce, heavily peppered, with thick noodles. Salty, rich, and designed to be eaten with a side bowl of plain white rice, the ramen functions almost as a sauce-like protein rather than a complete meal.

Invented in post-war Toyama for manual labourers rebuilding the city after WWII bombings. Gained national fame in 2009 when Menya Iroha won the Tokyo Ramen Show Grand Prix. Eat at the CiC branch near Toyama Station for convenience, or visit Taiki, the 1947-founded birthplace, still family-run.

Masuzushi + kombu culture鱒寿司・昆布

Toyama Station + Iwase + sushi counters

Masuzushi, salt-cured trout layered with vinegared rice, wrapped in bamboo leaves, pressed in a round wooden mould, cut into wedges like a cake. An 18th-century preservation method that travelled as gifts to Edo-period shoguns. Today the most famous ekiben at Toyama Station, Minamotono and Masuzushiya Takeura are the canonical makers.

Kombu (kelp), Toyama is one of Japan’s top kelp-consuming cities per capita, a legacy of the Edo-era Kitamae-bune sea trade. Try kobujime (kelp-cured nigiri), tororo-kombu (shaved kelp over rice), and kombu-jime sushi at counter restaurants.

    Breakfast. Masuzushi from Toyama Station the night before, or hotel breakfast. The masuzushi keeps for 24 hours and fits perfectly with morning tea.

    Morning. Coffee in Kansui Park; Toyama Light Rail to Iwase for a 10:30 AM tasting at Masuda Shuzō (Masuizumi sake). Buy a bottle for later.
  3. 03
    Lunch. Tram back to the city for Toyama Black Ramen at Nishicho Taiki, the original. Order the small bowl with side rice; that’s how the labourers ate it.
  4. 04
    Afternoon. Glass Art Museum or Castle Park. Coffee break at Sawasawa or a Sogawa-area café. Or take the Manyo Line tram to Shinminato Kitokito Market for a Bay-side seafood detour.
  5. 05
    Evening. Izakaya for a 3-sake flight + seasonal seafood starters (hotaruika spring; nodoguro autumn; buri winter). Then counter sushi with the Toyama Bay Sushi set + a kobujime nigiri to close.
