In brief

Toyama’s best sushi counters seat 7 to 18 people, mostly take bookings only and charge ¥15,000–¥29,999 for dinner (Tasuke is ¥10,000). SOTO, Fujitora and Dai are the three I would book first. Nanba serves omakase at lunch from about ¥6,000, and Sushimasa serves the local Toyama Bay Sushi set from ¥2,200 with no ¥20,000 dinner attached.

Toyama is a sushi destination

I live in Hokuriku, and Toyama has a lot of high-quality omakase. Most visitors never hear about it, because they eat their sushi in Kanazawa or Tokyo and treat Toyama as a station on the way. The fish is the reason to stop: Toyama Bay drops past 1,000 m close to shore, and the ports are a short drive from the counters. I have eaten at SOTO and Dai, and both were amazing. Fujitora is one of my top picks.

This page goes beyond the Toyama Bay Sushi set and the conveyor-belt shops. It covers eleven counters worth planning a night around, how to book them from abroad, what they cost, what is in season, and where to eat in Kanazawa and Fukui if you are heading that way. For the rest of the menu, see all Toyama restaurants, the Hokuriku food guide , the Toyama food guide and Toyama local eats, and for a base, Toyama as a base.

The counters

Eleven counters in Toyama Prefecture

My three picks first, then the rest by how easily a visitor can get in. Prices are the restaurant’s figure where it gives one, otherwise Tabelog’s dinner band. Confirm when you book.

01

SOTO鮨 SOTO · そと

Izumicho, central Toyama · about 700 m from the Arachi stop (荒町)

My pick. “I have eaten here and it was amazing.” The chef, Sotohiro Kosugi, spent 32 years in the US and ran a New York counter that held two Michelin stars for seven years. He came home to open SOTO. Two stars in the Michelin Guide Hokuriku 2021.

Omakase only: 11 or more small dishes, then about 10 pieces of nigiri, built on Toyama Bay fish. Everyone starts together at 17:30, 19:00 or 20:30 and the meal takes 3–4 hours. Parties of up to 4. Cancel at least 3 days ahead; the restaurant states no cancellation charge. Book: TableCheck · ☎ 076-422-8899.

Fujitora鮨 藤虎 · ふじとら

Kashimacho, Toyama · 1 min on foot from the Yasunoya tram stop (安野屋)

My pick. “One of my top picks in Toyama.” Chef Kotaro Ishiguro trained in Toyama, worked in London, and opened here in August 2023 on the second floor of a building above a hair salon, so look for the name rather than a sushi sign.

One seasonal omakase course, 8 counter seats, dinner only, with seatings at 18:00, 18:30 or 19:00. A food writer who rang to book alone was told a single guest was fine. Closed on irregular days plus Obon and New Year. Book: online · ☎ 050-5448-1828.

Dai日本料理 だい

Ōtemachi, central Toyama · 1 min on foot from the Kokusai Kaigijō-mae tram stop (国際会議場前)

My pick. “I have eaten here and it was amazing.” Dai is not a sushi bar: it is a Japanese omakase counter, and it is on this page for the fish. The course runs about ten dishes built on Toyama Bay and local produce: sashimi, charcoal-grilled bay fish, a seasonal hot dish, then handmade 100% buckwheat soba and rice. The dashi uses Northern Alps water, and there are more than 40 sakes. Tabelog rates it 3.77.

10 counter seats plus private rooms for 2 to 8 (children in the private rooms only). Lunch Tuesday to Saturday 12:00–14:00, dinner 18:00–22:00; closed Sundays and the first Monday of the month. Courses are ¥9,680 at lunch and ¥13,310 or ¥18,150 at dinner, tax included; ask whether a service charge is added. Book: Tabelog or TableCheck online · ☎ 076-456-3773.

Daimon is the top-rated sushi counter in Toyama Prefecture on Tabelog (3.95, checked 14 October 2026) and has won a Tabelog Award Bronze in 2026 and seven earlier years, plus Sushi West Hyakumeiten selections in 2021, 2022 and 2025. One star in the Michelin Guide Hokuriku 2021.

Edomae (Tokyo-style) technique on Toyama Bay fish, 15 seats (7 at the counter, 8 at tables), open Tuesday to Sunday 17:00–22:00. Book online through Pocket Concierge, which takes bookings 24 hours a day. Stay in Toyama and take the Ainokaze line back; it is not covered by a JR pass. Book: Pocket Concierge · ☎ 0765-32-5868.

Nanba鮨 難波 · なんば

Kumonmyo (公文名), Toyama · about 530 m (10 min) from Oizumi Station, Toyama Chiho Railway

Omakase only, at both lunch and dinner, using Toyama Bay seafood and Toyama rice. That makes it the cheapest way into a serious counter: lunch sits in the ¥6,000–¥7,999 band, against ¥20,000–¥29,999 for dinner (Tabelog bands). Sushi West Hyakumeiten in 2022 and 2025. One star in the Michelin Guide Hokuriku 2021.

18 seats: 10 at the counter and 8 in a private tatami room. There is no phone booking; reserve through TableCheck on the restaurant’s own site. Payment is by credit card only, and a 10% service charge is added. Book: TableCheck only.

Course only, pairing Toyama fish with small seasonal dishes and local sake or wine, in a room fitted with Toyama craftwork. 8 counter seats, lunch (12:00–15:00) and dinner (18:00–22:00). Sushi West Hyakumeiten 2025. Listed (Plate) in the Michelin Guide Hokuriku 2021.

It is out by the old merchant port of Iwase, so pair it with an afternoon on the Iwase side of Toyama City. Cancellation fees are steep: 50% from four days before, rising to 100% the day before. Book: Ikyu or Pocket Concierge · ☎ 076-471-8522.

Sushi Yoshi鮨よし · すしよし

Shimotago, Himi · about 2 km from Shimao Station on the JR Himi Line, so taxi or car

Sushimasa江戸前 寿司正

Ichibancho, central Toyama

The long-established one: about 60 years old, Edomae in style, and run by a chairman of the prefecture’s sushi trade association. It serves the Toyama Bay Sushi set at lunch, so it is where I would send anyone who wants the local set without a ¥20,000 dinner.

16 seats (8 at the counter, 8 on a raised tatami platform). Lunch 11:30–13:30 and dinner 18:00–23:00 Monday to Saturday; Sundays and holidays 17:00–22:00. Closed Tuesday and Wednesday. Prices from ¥2,200. Book: ☎ 076-421-3860.

How to book omakase as a visitor

Six things to get right before you land.

  1. 01
Book online first. SOTO, Fujitora and Nanba use TableCheck, Daimon and GEJO use Pocket Concierge (GEJO also Ikyu). Nanba does not take phone bookings at all. Where only a Japanese phone line exists, ask your hotel to call.
  2. 02
Read the cancellation terms. SOTO asks for 3 days’ notice and states no cancellation charge. GEJO charges 50% from four days before, 70% two days before and 100% the day before or on the day.
  3. 03
Tell them about allergies when you book. Not at the counter. Counters buy fish for the number booked, and the chef will swap anything you cannot eat if you say so.
  4. 04
Arrive on time. SOTO starts every seat together at 17:30, 19:00 or 20:30. Fujitora seats at 18:00, 18:30 or 19:00. If you are going to be late, phone; SOTO may cut the course short and charge in full.
  5. 05
Skip strong perfume. You eat at nose height beside the fish and the rice. A counter this small notices.
  6. 06
Check how you pay. Nanba takes credit cards only and adds a 10% service charge. Yojiro in Kanazawa is cash only from 2026. Carry both.

FAQ

Toyama sushi, answered

Do I need to book sushi in Toyama?

For every counter on this page, yes: SOTO, Fujitora, Daimon, Nanba and GEJO are all booking-only, and Nanba takes no phone calls. If you have not booked, order the Toyama Bay Sushi set (¥2,700–¥5,500) at a participating shop, or eat at Sushimasa, which serves it at lunch.

How much does omakase cost in Toyama?

Dinner at the top counters runs ¥15,000–¥29,999 a head on Tabelog, with Daimon at the low end (¥15,000–¥19,999) and SOTO, Nanba, GEJO and Fujitora at ¥20,000–¥29,999. Lunch omakase at Nanba and Sushi Yoshi sits at ¥6,000–¥7,999. Drinks are extra.

Which is the best sushi restaurant in Toyama?

On Tabelog the order on 14 October 2026 was Daimon (3.95), Sushi Yoshi (3.92), Nanba and Wakana (3.78 each), SOTO (3.76) and GEJO (3.75). My own first three are SOTO, Fujitora and Dai, the last a Japanese omakase counter rather than a sushi bar. The latest Michelin rating is the Michelin Guide Hokuriku 2021, which gave SOTO two stars and Daimon and Nanba one star each; Michelin has not reviewed the region since, so Tabelog is the current ranking.

How do I get to Daimon and Tasuke in Uozu?

Take the Ainokaze Toyama Railway from Toyama to Uozu, about 25 minutes. Daimon is 87 m from the station and Tasuke 171 m. The Ainokaze line is not covered by a JR pass, so pay the fare or use an IC card.

Can I book a Toyama sushi counter alone?

Often yes, but ask. A food writer who phoned Fujitora was told one guest was fine, although its online form then required two. SOTO takes parties of up to 4. Phone, or ask your hotel to call, and say you are one.

When is the best season for sushi in Toyama?

Winter for buri and buritoro (November to February), spring for firefly squid (March to early June) and shiroebi (April to November), and September to May for red snow crab. If you can only choose one, pick winter.
