The ryokan and auberges worth the journey

泊まるために旅する宿

By Kelvin, who lives in Hokuriku12 stays, 4 more on my list

In brief

Small ryokan and auberges you travel to for the stay itself: rooms that are things of beauty, a remarkable bath, and a creative dinner with wine, sake or tea pairings. My two favourites are BYAKU Narai in the Kiso valley and Wakasa Kajitsu on Wakasa Bay. Prices run from ¥17,900 to over ¥100,000 per person with dinner and breakfast; most are reached by train and a free shuttle.

These are the stays I would cross Japan for: wooden houses and smooth concrete, baths that frame a forest or a bay, and dinners that are fine dining, not the usual kaiseki. Most are in or near Hokuriku, where I live, and the rest are worth the detour.

I have stayed at ten of the twelve and write those in my own words; ESHIKOTO and the four at the end are researched and marked Not stayed yet. Prices are per person with dinner and breakfast unless a card says otherwise, read on 22 October 2026. For a simple onsen night, see onsen by Shinkansen; for dinner alone, the Hokuriku food guide.

The four to book first 極

Each is the reason for the trip, not a bed on the way, and each can be booked online from abroad.

No. 01Narai-juku, Kiso valley · NaganoStayed

BYAKU Naraiビャク 奈良井

“Probably one of the best hotels I've ever been to.”

Sixteen rooms spread through four old houses and a former sake brewery (founded 1793) on the main street of Narai-juku, to me the most beautiful post town in all of Japan. The curation is immense and the rooms are things of absolute beauty; the annex has a beautiful lounge, Gen 玄.

The bath: mine smelled of hinoki and sake-kasu (sake lees), and the water was soft and smooth. Most rooms have their own bath, many of them half open-air, and there is a public bath, San-sen 山泉, on mountain spring water.

The table: dinner at kura 嵓, in the old brewery, was incredible. I'm not sure it holds stars, but to me it was cooking at two-star level. The pairing was amazing: a mix of wine, sake, house-made gins and teas, one of them like kombucha. There is a little sake bar too, with all those house-made gins and syrups.

A magical experience. I paid £600 for a night and would definitely pay more. It was that worth it.

No. 02Shimogyō, near Nishi Honganji · KyotoStayed

Nazuna Kyoto Nishi HonganjiNazuna 京都 西本願寺

“Curation top, breakfast top.”

Five rooms in a former ryokan, opened 1 October 2025. The curation is top. You check in seated on stone in a lobby that is a dry-landscape garden by Chisei Shigemori, black walls and lanterns: the entrance is like a zen garden, and there was free sake in the lounge.

The room and bath: 45–92 m², every room with its own bath, half open-air in three. The table: breakfast in the room was top. I didn't eat the dinner, but I read it is amazing; it comes only on some plans, so pick one that includes it.

No. 03Tobira Onsen, Matsumoto · 1,050 m · NaganoStayed

Tobira Onsen Myōjinkan扉温泉 明神館

“Nature, literally framed.”

A 1931 onsen inn alone at the end of a mountain road above Matsumoto, Relais & Châteaux since 2008 and awarded One MICHELIN Key in September 2026. The room wasn't truly amazing like some of the others here.

The bath: one of the most beautiful I know. The standing bath, Setsugekka 雪月花, is a window onto nature: the forest framed in front of you, an immense view, the water chest-deep. Alkaline simple spring, 38–40°C.

The table: dinner was French-Japanese fusion and amazing, at what felt to me like one-star level (the hotel's award is the Key, not a star). You choose at booking between Nature French Sai and Shinshū Dining TOBIRA. The sake pairing was top, top notch.

No. 04Ano, Obama · Wakasa Bay · FukuiStayed

Wakasa Kajitsu若狭佳日

“Beauty beyond imagining.”

Maybe the second-best hotel I have stayed at, after BYAKU, and it deserves massive props. Thirteen rooms in three buildings, a renovated inn and a samurai-style house on a calm inlet of Wakasa Bay, open since 2023.

The room: I stayed in the concrete room on the roof, a penthouse of a room (the 4th-floor Grand Suite, Room 401), and it was extraordinary. A bath in the room that runs all the time, the bay outside the glass, and the sunrise coming up over it. The baths here are ordinary water, not hot spring; the tiled bathhouse, Yudokoro Uchitomi 湯処 内外海, runs to an infinity edge over the water.

The table: dinner was amazing. Wakasa guji (tilefish) runs April to September and Wakasa fugu October to March, with Fukui sake. We had a sake set; sadly there is no pairing.

05Nara Park, by Tōdai-ji · NaraStayed

VILLA COMMUNICOヴィラ コムニコ

A restaurant with five rooms at the foot of Mt Wakakusa, an auberge since 12 September 2024. The rooms (35–38 m², with balconies) are named for the elements; interiors by h design works, after Georgia O'Keeffe's house in New Mexico. Bathrooms are ordinary, with no tub to speak of.

The table: owner-chef Daiki Horita cooks over wood fire with fermentation, ageing, game and wild river fish: one Michelin star in the Michelin Guide Nara 2022 special edition and two Gault&Millau toques. A drinks pairing is offered. Be back for dinner if you go out after check-in.

06Matsunoyama Onsen, Tokamachi · NiigataStayed

Sake no Yado Tamakiya酒の宿 玉城屋

An old onsen inn in the snow country, renovated in 2018 by its fourth-generation owner, a sake and wine sommelier, as an inn built around Niigata sake. We were welcomed with drinks (gin, and a pear drink, I think). The room wasn't the focus and not that highly curated: the food and the sake were the stars.

The table: French-led "snow-country cuisine" that won one Michelin star in the Michelin Guide Niigata 2020 special edition; the head chef today is Takahiro Ōfuchi. The Niigata Premium Sake Pairing is immense: rare Niigata sake, one per course, 6–7 glasses for ¥16,500. A non-alcoholic pairing has been offered too; ask when you book.

The bath: Matsunoyama's 88.7°C chloride spring runs straight through every bath. Six of the eight rooms have a private open-air bath on the source.

07Mikuni port town, Sakai · FukuiStayed

Auberge Homachi Mikuniminatoオーベルジュほまち 三國湊

Sixteen suites in nine restored machiya and storehouses scattered through the old port of Mikuni, a cute town 10 min from Tōjinbō. Absolutely amazing historic and cultural rooms: Fukui timber, Shakudani stone, handmade furniture, each with its own bath (ordinary water; Awara Onsen is 10 min away).

The table: neoclassical French on Echizen crab, amaebi and Wakasa beef at Tateru Yoshino Mikuniminato. Top in its class: Michelin level to me, though it holds no star. The hotel is in the MICHELIN Guide hotel selection and Forbes JAPAN's The 30 Collection 2026.

08Shitsumi fishing hamlet, Obama · FukuiStayed

Sea-Auberge Shitsumi海のオーベルジュ志積

A renovated fisherman's inn in a hamlet on the Uchitomi peninsula, eight rooms in two houses, no TVs or clocks. Very cute little rooms, a bit squashed, but a nice bath (a panoramic bath over the bay), nice curation and amazing, top-notch cooking.

The table: the day's Wakasa Bay catch in creative courses in a wood-and-glass dining room facing the sea; fugu or crab plans in winter. Two of the rooms share a bath.

The table: dinner alternates by day between the Japanese counter En えん (12 seats; chef Shinpei Komatsu, formerly of Chiso En, starred in the Michelin Guide Hokuriku 2021) and the French restaurant cadre. A Kokuryū sake pairing is offered. Children are welcome. Only open since late 2024, so reviews are few.

Three rooms, so three groups a night: Do 土 in earthen plaster, Shi 紙 in washi and Ken 絹 in local silk, each with a deck over the fields.

Formerly NIPPONIA Mino, renamed NAE 美濃 on 8 September 2026 (same houses, same operator). What a town, what a room: mine had two floors, all wood, traditional yet modern, with washi lampshades and amazing curation. Eleven rooms in three heritage houses, one of them a washi merchant's villa where every room has a hinoki bath over the garden; there is even a room that comes with a garden.

The table: when I stayed, dinner was brought to the room and there was plenty of free sake in the fridge. Since the rebrand, guests eat dinner in the town's restaurants and breakfast is served in the room. The hotel runs town walks and other experiences.

Practical

Before you book

  1. 01
Book months ahead. L'évo (three cottages), Rakudo-an (three rooms) and VILLA COMMUNICO (five) are tiny and fill first; Tamakiya's year-end sake-pairing plan and Wakasa Kajitsu's Room 401 in crab season sell out. Two to three months is safe; for New Year and the crab weeks from 6 November, earlier.
  2. 02
Arrive by check-in. Dinner is the point of the stay and starts at a fixed time: shuttles leave once or twice in the afternoon (14:30 at Obama, 14:50 at Etchū-Yatsuo, 15:15 or 16:30 at Matsumoto). Miss them and you pay for a long taxi and may miss the first courses.
  3. 03
Give dietary needs when you book. Courses are set days ahead on what the chef has bought. Allergies, no raw fish or vegetarian requests go in the booking form or by email, not at the table. Homachi books its dinner slot three days ahead.
  4. 04
Budget for the pairing. It is usually not in the room price: Tamakiya's sake pairing is ¥16,500 (6–7 glasses), nei at Rakudo-an ¥5,500 or ¥8,800. Non-drinkers: BYAKU Narai pours teas and house juices, and Tamakiya has offered a non-alcoholic pairing; ask the others.
  5. 05
Children and ages. L'évo, Satoyama Jujo, Shoraiso, Nazuna and Tsuruko set age limits (see the FAQ). Most rooms sleep two; ask before booking a third bed.
  6. 06
Private baths and tattoos. Where every room has its own bath (BYAKU, ESHIKOTO, Homachi, Nazuna, NAE Mino and most rooms at Tamakiya), tattoos are not an issue in your room. Shared baths such as Myōjinkan's follow the inn's own rules, so ask. See private and tattoo-friendly onsen.
  7. 07
Pickups need a booking. Every shuttle on this page runs by reservation, usually by the day before (Homachi by 17:00). L'évo's costs ¥6,600 return per group; the rest are free.
FAQ

Destination stays, answered

What is an auberge in Japan?

A restaurant with rooms: オーベルジュ, from the French. The chef is the reason to go, dinner is the event of the stay, and you sleep a few steps from the table, often somewhere you would not otherwise reach after a long dinner with drinks, such as L'évo in the mountains at Toga or Homachi in the old port of Mikuni.

How are these different from a classic ryokan?

A classic ryokan serves a set kaiseki dinner and the bath is often the main draw. These stays keep the bath but put design and the kitchen first: creative or French-Japanese cooking, wine, sake or tea pairings, and few rooms (3 to 16 for most). Beniya Mukayu, on my list, is the exception: superb design and baths, with a classic kaiseki dinner.

Are they worth the price?

For me, yes. I paid £600 for a night at BYAKU Narai and would pay more. Prices start at about ¥17,900 per person with dinner at Sea-Auberge Shitsumi and run past ¥100,000 per person at Nazuna Kyoto and Tsuruko. Dinner, breakfast and the room are one booking, so compare them with a starred dinner plus a good hotel, not with the room alone.

Which of these stays have Michelin stars or Keys?

Stars: L'évo (two stars and a Green Star, Michelin Guide Hokuriku 2021), Sake no Yado Tamakiya (one star, Michelin Guide Niigata 2020) and VILLA COMMUNICO (one star, Michelin Guide Nara 2022). MICHELIN Keys, the hotel award: BYAKU Narai, Tobira Onsen Myōjinkan, Beniya Mukayu, Satoyama Jujo, Shoraiso and Tsuruko, one Key each. Myōjinkan's dinner has no star.

Which ones take children?

Kanshukuen ESHIKOTO welcomes children, Auberge Homachi has a children's dinner set (¥4,840) and Myōjinkan takes families in its Japanese rooms. L'évo is 12 and over, Satoyama Jujo does not take children under 12, Shoraiso is 13 and over, Nazuna Kyoto takes no children 5 and under, and Tsuruko takes no young children. Ask the others when you book.

Can I reach them by train?

All of them, some with a taxi or bus for the last leg. Five run free shuttles from a station: Myōjinkan from Matsumoto, Wakasa Kajitsu from Obama, Homachi from Awara-Onsen, ESHIKOTO from Fukui and Tamakiya from Matsudai; L'évo's shuttle from Etchū-Yatsuo costs ¥6,600 a group. BYAKU Narai is 5 min on foot from Narai Station and Nazuna 14 min from Kyoto Station. Book the shuttles when you book the room.
