In brief

Most travellers don’t come to Japan thinking “I’ll go to Toyama for sushi.” They arrive in Toyama and discover that Toyama City spends more on sushi per household than any other city in Japan, ¥23,185 in 2024. The reason is disarmingly simple: Toyama Bay. The only bay in Honshu that drops past 1,000 metres deep, with 500+ species and fishing ports within minutes of downtown restaurants.

Japan’s “Natural Aquarium”

Toyama Bay sits in a rare geographical position: three cold-water and warm-water currents meet here; extreme depth within minutes of shore means deep-sea fish like nodoguro, firefly squid, and glass shrimp can be caught close to port; nutrient-rich snowmelt floods the bay every spring and summer; and over 60% of all seafood found in the Sea of Japan passes through or lives in Toyama Bay.

The result: Toyama Bay’s fish is kitokito, a local dialect word that roughly means “alive, fresh, bursting.” It’s so beloved that Toyama Airport’s official name is Toyama Kitokito Airport. A seasonal set menu using only locally-landed Toyama Bay fish. The composition changes by restaurant and by season, but the rules are strict: all fish from Toyama Bay; all rice from Toyama Prefecture; each piece served with a proper explanation.

The five iconic fish富山湾五大鮮魚

Different by season

If you only learn five fish names: 1. Shiroebi (白海老), translucent, intensely sweet glass shrimp, almost exclusive to Toyama Bay. 2. Hotaruika (ホタルイカ), bioluminescent firefly squid in spring (see our dedicated guide). 3. Buri (鰤), winter king, fatty Japanese amberjack. 4. Koshi no Akagani (越の赤蟹), sweet red snow crab. 5. Nodoguro (のどぐろ), oily luxurious blackthroat sea perch, best grilled or as nigiri.

Kobujime, Toyama’s kelp-cured nigiri昆布締め

One of Toyama’s lesser-known sushi traditions. White fish (usually hirame or suzuki) is sandwiched between sheets of kombu for several hours, drawing out moisture and imparting deep umami. A hallmark of Toyama sushi.

The technique is rooted in Toyama’s Kitamae-bune trade history, Edo-period ships brought Hokkaido kombu down the Sea of Japan coast and kelp became woven into local cuisine. Toyama is one of Japan’s top kelp-consuming cities per capita.

Masuzushi, pressed trout sushiます寿司

Toyama’s other famous sushi: salt-cured trout layered with vinegared rice, wrapped in bamboo leaves, pressed in a round wooden mould, and cut into wedges like a cake.

An 18th-century preservation method that travelled as gifts to Edo-period shoguns. Today, Toyama Station’s most famous ekiben. Minamotono (源) is the canonical maker; Masuzushiya Takeura has a higher fish-to-rice ratio for serious eaters; Sekino is another standout. Buy one to eat on the train as you leave Toyama.

Reservation recommended; many don’t take online bookings. Top picks include Sushi Sanpei (Toyama Bay Sushi participating), Sushi Masa, Sushi Yui, and Takaoka’s Tenzushi. Most cluster in the Sogawa / Ichibancho area in central Toyama.

For the raw-fish-curious. Shiroebi-don at Shiroebi-tei is the canonical lunch; Toyama Bay kaisendon piles a seasonal assortment. Buritoro-don in winter is the indulgent winter alternative.

Practical tips

Before you book

Five things first-time visitors usually wish they’d known.

    Reserve a counter dinner. Best places don’t take walk-ins; many don’t accept online bookings. Phone (or have your hotel concierge call) at least a day ahead, two if it’s a Friday or Saturday.

    Ask for the “Toyama Bay Sushi” set. ~¥3,500–¥5,500. Strict local rules. The reliable on-ramp at participating restaurants if you don’t want to commit to omakase.

    Try kobujime. The kelp-cured nigiri is a Toyama signature most visitors miss. Ask the chef to include a piece, it’s usually offered if you ask.

    Pair with Toyama sake. The water that makes the rice also makes excellent sake, Masuizumi (Iwase), Tateyama, Mitsuishi (Gokayama). Most izakaya offer 3-sake flights for ¥500–¥1,000.

    Leave with masuzushi. Buy one at Minamotono’s Toyama Station shop for the train. Lasts ~24 hours; perfect cross-Japan lunch.
